Spelled porridge and beetroot salad

Ingredients:  100g of spelled porridge one large cooked beetroot 3 celery sticks handful of green olives piece of fresh ginger handful of capers salt and pepper to taste lemon fresh mint Cook the spelled porridge accordingly to the instructions on the package. Let it cool down. Cut the beetroot, celery and olives into preferred size pieces. Cut the peeled ginger into tiny cubes. Mix all ingredients, add salt and pepper to taste. Dazzle with lemon. Right before serving add fresh mint leaves and mix well. 

Overnight Blueberry Oats

Ingredients:  6 tbsp oats 150ml unsweetened soy milk 1 tsp maca powder 1 tbsp chia seeds 100g of blueberries Mix the oats, maca and chia seeds together in a bowl. Add milk and mix well. Leave overnight in the fridge to soak. Before serving, add fruit on top.
